Asian Slaw

One of my favourite side dishes to make, this slaw makes for a colourful and tasty bowl of veggies!

In a bowl combine:

2 cups chopped red cabbage
1 cup chopped yellow pepper
1 cup thinly sliced cucumber
1 cup thinly sliced tomatoes
1 cup slivered carrots
1 avocado cut into strips

In a separate bowl whisk together:
1/2 cup rice vinegar
1 TBSP soya sauce
1 tsp lime juice
1 TBSP peanut butter
1 tsp sambal oelek

Toss veggies with dressing and enjoy!
